Holy smokes those look good!! I have always wanted to try making shortbread cookies since my grandma stopped baking them for Christmas. I loved hers, but the brown sugar is a deal-breaker. I’m gonna have to make these.

These look really easy and delicious. I like to use natural sugar (the brand I use is Rapunzel whole sugar) that is basically brown sugar that is dry and fine like white sugar. It always adds a bit of a molasses taste, so I have to be careful if that’s not a taste I’m okay with in a recipe. Recipes that call specifically for brown sugar are good in my book because I know the taste will work with the sugar I use. 🙂

I’ve never made shortbread cookies before. I didn’t know that brown sugar isn’t a usual ingredient in them! I’m guessing it’s like my favorite chocolate chip cookie recipe, though. In it, you use white sugar but then brown it on the stove to bring out the richness and heighten the moisture content of the cookies. That’s my guess, anyway!
