3 Ingredient Nectarine Jam
Nectarines are available around our area most of year. Some times they are so sweet that they just run down your chin…but other times…whew SOUR doesn’t come close to describing the taste.
If you are using ripe nectarines, you will need closer to the 4 Tablespoons of Agave Nectar and 3 Tablespoons of Chia Seeds. If the nectarines are hard and tart, cut the Chia Seeds by half and start with 2 Tablespoons of Nectar, add more to taste.
Ingredients:
2 Ripe Nectarines
3-4 Tablespoons Agave Nectar* (to taste)
2-3 Tablespoons Chia Seeds
Directions:
1. Peel and dice the nectarines (I like to leave the skins on)
2. Place nectarines in Food Processor and pulse until finely chopped (again your choice on consistency) – press any larger pieces down along the sides
3. Add in Agave Nectar and Chia Seeds – pulse just to mix
4. Place in jars and store in fridge for 2-3 weeks
That’s It! The jam will gel up as the seeds swell. It is best is made the night before. Not too bad for lower calorie jam.
If you want to store the jam for a longer period, please refer to the “bath canning” method to seal the jars.
*Honey can be used in the place of Agave Nectar. *Splenda can be added if nectarines are too tart.
