3 Ingredient Peach Jam
I love peaches! However, I can’t touch them or eat them with the skin still on them. The only way I can handle them without breaking out in hives is if they are wet or peeled.
This is a tough allergy because we all know how wonderful a fresh, sweet peach can taste on a hot summer day. This jam can be made in a lower calorie jam for those needing to monitor their sugar intake.
Ingredients:
2 Ripe Peaches
3-4 Tablespoons Agave Nectar* (to taste)
2-3 Tablespoons Chia Seeds
Directions:
1. Peel and dice the peaches (not sure about the skins being left on as I can’t eat them)
2. Place peaches in Food Processor and pulse until finely chopped
3. Add in Agave Nectar and Chia Seeds – pulse just to mix
4. Place in jars and store in fridge for 2-3 weeks
The jam will thicken up as the seeds swell. Not bad for lower calorie jam.
If your peaches are really ripe, you will need closer to the 3 Tablespoons of Chia Seeds. If the peaches are hard or tart, cut the Chia Seeds by half and start with 2 Tablespoons of Nectar, add more to taste.
If you want to store the jam for a longer period, please refer to the “bath canning” method to seal the jars.
*Honey can be used in the place of Agave Nectar. *Splenda can be added if nectarines are too tart.
