Bacon Wrapped Asparagus

Bacon Wrapped Asparagus

Bacon..okay I know I will love it. How about crispy bacon wrapped asparagus? Yeah, I am all for giving this recipe a try. I mean, what's not to love?

It meets my appetizer requirement of being easy to make and delicious to eat. 

The hardest part of making my bacon wrapped asparagus is cutting up the bacon.

Ingredients:
1 bunch fresh asparagus (about 20 stalks*)
10 pieces of center cut bacon
Salt and Pepper

Directions:
Snap or trim off the thick woody stem of the stalk before rinsing and patting dry on paper towels.
Slice or cut bacon strips  in half length side so you have two long, thinner slices of bacon.

Starting at the top, wrap the bacon around the asparagus.

Line a baking sheet with foil, parchment or a silicone baking mat.

Bacon Wrapped Asparagus

Place the bacon wrapped asparagus on the baking sheet leaving room between (not touching).
Set oven rack on second slot and place pan of bacon wrapped asparagus in the oven before turning it on.

Turn on oven to bake at 400 degrees.
Total baking time is around 20-25 minutes or until the bacon is crispy and the asparagus is done.

Remove from oven and sprinkle with salt and pepper
Serve while hot

 

* Use any quantity of fresh asparagus you want. Then adjust the amount on bacon. You will need half the number of bacon slices as asparagus stalks because you are slicing the bacon in half.

These trays can be made ahead, ready to bake several hours ahead of time as long as stored in the refrigerator.

Serve with a cool cucumber dip or a spicy hot sauce.

Plan on making far more than you think you need. These bad boys go like crazy.
