Baked Egg Salad

 

Eggs in the Oven

If you missed the original article on baking your whole eggs in the oven, you should consider this option the next time you are going to be cooking a large batch of eggs.

Eggs in the Oven

Directions ~ Makes 2 sandwiches

4 eggs – baked in the oven – peeled and chopped
2 Tablespoons Mayonnaise
1 teaspoon Celery Seed or Flakes
1/2 teaspoon Mustard
1/2 teaspoon Paprika
Salt and Pepper to taste

Eggs in the Oven

I like my egg pieces fairly large so I don't chop them too much.  Combine the above ingredients. Add more mayo if desired (I prefer mine a little on the dry side).

Of course you can use hard boiled eggs, I whipped this up after several test runs on baking whole eggs. The other eggs tested were opened at different time increments to check cooking times.

Great on toast or with crackers.
