What's more perfect on a blustery, rainy, fall day than a big pot of chili? Chili just says “Hi, welcome to fall!” It's perfect in its own eclectic way. There's so many different recipes out there and so little time to try them all!

Every year, my husband's family has their annual Nuckols reunion. We have a contest for the best chili and best wine. This year will be my forth reunion. The 2nd year I won the chili cook off (I think it was because I was massively hugely seriously pregnant and they didn't want to hurt my feelings.. **squirrel** there's this myth that pregnant women are emotionally sensitive..maybe I was?) Anywho!! Back to the chili! This year I  am making what I have named: “Beth's blanco on yo butt chicken chili!”

 

Ingredients:

– 1 &1/2lbs boneless, skinless chicken breasts (about 3-4 pieces);
– 2 cans of cannelloni beans (drained)
– 1 can of white northern beans (drained) (beans beans good for your heart! Beans beans make you.. Well u know)
– 1 box of chicken broth
– 1 can of white (or yellow whatever u got!) corn (drained)
– 1 can of green chilies (I used the Rotel diced tomatoes and green chilies–don't drain!)
– 1 packet of chili seasoning

Directions:

In a biiigggg pot (or crock pot if you're a planner), throw all the beans, corn, broth, chili seasoning and chilies in the pot. Turn on low. Cut up and cook the chicken thoroughly. Mix the chicken into the biiigggg pot. Add some ground cumin, garlic powder, salt & pepper and oregano (about 1-2 tbsp each). You can spruce it all up by adding an onion (I used onion powder). Cook on low letting all seasonings and juice simmer.

Once all cooked, I scooped out some of the juice and mixed it with some flour and sour cream to thicken it up then put it back into the pot. I served the chili over rice and topped it with Mexican style shredded cheese. It was ffaaannnttaassttiicc!! My husband, son and I all had 2 bowls each and still had plenty of left overs. I am going to win the chili cook off this year!!!

    I love Chicken Chile, my husband not so much, but I still make it on occasion!! I like to buy Rotisserie chicken for this kind of dish.

    I make homemade chili all winter but never made it with chicken. Normally use beef or turkey. This recipe sounds yummy and so easy to make.

    I have never tried white chili. It may be tasty. I’m very picky. I would eat it if offered, but would make a super small batch to begin with just in case I didn’t like it. My husband would like this.

    Love the name of this post, hahaha. I do not cook much chili because it always seems so long and complicated but this one doesn’t. i am so trying this recipe tonight. I have to go buy this ingredients! I hope it taste as good as it looks and sounds!

    i love that the rcipe was made with cannelloni beans as im a huge bean eater and have them daily as it consists of lots of protiens and i loved the recipe was looking forward to find it online and came accross your post.

    WOW! That’s really different! I have never had chicken chili before! I’m only used to the regular red chili with the kidney beans! This sure sounds good though! I only have one problem. My hubby does not like and will not eat chicken! I could always use turkey, it might be about the same. I have no idea why he won’t eat chicken but he’ll eat turkey (MEN?)
