Chicken Quinoa Stew
Tis the season for stews! I love the cooler weather and bowls of soup. Using quinoa in stew is new to me, but we have eaten quinoa as a side dish and in salads before so I was expecting this dish to be good.
One of our meals as part of the Hello Fresh Review box was the chicken quinoa stew. Within the box was everything we needed to prepare the dish.
Ingredients included were:
2 chicken breasts
1 cup quinoa
1.5 oz. parsley
1 onion
1 zucchini
1 tomato
1 lemon
2 stock cubes
1 teaspoon chili flakes
We had to pull out the butter and olive oil to complete the ingredient list.
The directions were super simple and clearly written, except that with the Hello Fresh Box you have a photo tutorial to refer to throughout the cooking process.
Directions were to bring six (6) cups of water to a boil with the stock cubes. Once boiling, the stock was kept on simmer. In another pot, the quinoa was mixed with 1.5 cups of stock and placed on simmer for 15 minutes. While the quinoa was cooking, the remaining vegetables and chicken were diced and placed in a fry pan with a little olive oil and butter. Once veggies were tender, about eight (8) minutes, they were placed in the stock broth. Drizzling just a little more oil in the fry pan, the chicken was cooked until done (5 -7 minutes).
We combined the chicken in the broth with the veggies and dumped the quinoa in when done. Seasoned with salt, pepper, chili flakes and parsley before serving.
The stew had a bite to it. I think the next time we have it, I will offer the chili pepper flakes on the side.
