Chile Dusted Shrimp with Corn Relish
Having been raised in the South, we love seafood. And although I don’t particularly enjoy cleaning shrimp, they are one of my favorite proteins to eat. That said, this entrée of Chile Dusted Shrimp with Corn Relish was a new one to me.
One of our meals as part of the Hello Fresh Review box was the Chile Dusted Shrimp with Corn Relish. Within the box was everything we needed to prepare the dish.
Ingredients included were:
8 oz. Shrimp (Cleaned for me!)
1 Red Bell Pepper
2 Cloves Garlic (peeled)
1 Thumb Ginger
2 Scallions
1 can Whole Corn
2 Tablespoons Wine Vinegar
1 teaspoon Ancho Chile Powder
1 teaspoon Chile Powder
We had to pull out our sugar and olive oil to complete the ingredient list.
The directions were super simple and clearly written, except that with the Hello Fresh Box you have a photo tutorial to refer to throughout the cooking process.
First up was marinating the shrimp in the chile powders and 2 teaspoons of sugar. We placed the spices in a baggie and shock to cover the shrimp. They were placed aside to marinate while we prepared the rest of the dish.
Everything else was minced or diced really small and sautéed in a large pan. Once the vegetables were starting to soften up, we added the drained can of corn and cooked for 3-4 minutes until heated through. The corn relish was placed in a serving bowl and covered to keep warm.
Using the same pan, we added 2 teaspoons of olive oil and tossed in the shrimp. They were cooked over medium-high heat for about 4 minutes turning once to get both sides nice and brown. Shrimp was then tossed with the corn relish and served.
This was awesome! In the future, I will chop the shrimp up before tossing in the corn relish. I think having a little shrimp in each bite would be better than a few whole shrimp that seem to be eaten before the relish is gone.
My crew did not feel this was enough for a meal but suggested using is on toasted rounds or with scoop chips as a side dish in the future.
