Cream Cheese Corn

 

Looking to mix up plain ole corn for a fellowship meal or buffet? This quick little change up will become the normal in no time!

I don't think I will ever fix plain corn on the stove top again….

Ingredients:

1 can Whole Sweet Corn (drained)
1/4 Stick (2 ounces) Cream Cheese
1/4 Stick Butter

 

Drain corn and dump into a casserole dish. (It helps with clean up to spray with non stick). Cut cream cheese and butter into  pieces and place on top of the corn. No need to mix as both the cheese and butter will melt while baking.

 

Bake in 400 degree oven for 15-20 minutes or until corn is hot and cheese/butter melted. I like to cook it until some of the corn kernels are browned and crispy.

Stir before serving.

Options:

~ Saute an onion in butter to soften before adding to corn
~ Mix in about a teaspoon of horseradish before serving to add just a little kick
~ Toss in a diced red sweet pepper for color and crunch
