Crock Pot Spiced Almonds
I love the bags of almonds sold at the convenience stores but I don’t like the price or the sugar! I make them at home with Splenda. They are not quite the same, but close enough to meet the snack craving. If you use the Splenda baking blend, you will get the crispier coating more like the sugar coated ones. Either way, they are awesome!
4 Cups almonds (I prefer raw but have used unsalted roasted)
4 Tablespoons butter
1/3 Cup Splenda (Sugar works just as well)
2 Teaspoons cinnamon or apple spice
½ Teaspoon salt
Place nuts in crockpot
Melt butter and mix in the splenda, cinnamon/spice and salt
Drizzle the butter mixture over the almonds and stir to coat
Cook on low for about 2 hours
Spread out on foil or parchment paper to cool – if you can keep out of them!
