Crockpot Bean Stew

Crockpot Bean Stew

 

It doesn’t get much easier than this hearty bean stew. Toss & Go lifestyles will love this recipe. No meat is needed or missed but could easily be tossed in to use up leftovers. This soup freezes well and makes a great take along or care package for a friend.

Ingredients:

  • 6 cups chicken or vegetable broth
  • 2 cups dry beans, rinsed
  • 3 carrots, diced
  • 1 onion, diced*
  • 3-4 celery stalks, diced
  • 1/2 cup uncooked white rice
  • 2-3 Tablespoons garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

 

Instructions:
Toss & Go lovers… just add all the ingredients to your crockpot
Turn on low and let it go for 6-8 hours

*Options:
Hold back half the diced onion and sprinkle on top before serving
My crew loves this with corn bread and honey!
Meat is optional for this soup. However, tossing in your leftover meat is a great way to use it

This stew has a clear broth. If you prefer a creamier base, try adding our cream soup mix. Just a little something to mix up the menu.

    We are going to be making ham and bean soup tomorrow. We got 3 bags of mixed beans today and the leftover ham bone and trimmings from the other day. Thanks for the recipe, it looks good. We’re going to have some cornbread & honey too.
