Crockpot Hamburger Soup
This is a modified recipe that my granma used to make when I was young. It should probably be called leftover hamburger soup since we usually had it the day after ground beef was on the evening menu. My granma could make a soup out of just about anything.
Because I personally don’t care for the flavor of beef broth, so I make this with vegetable broth. I also prefer quinoa to barley but that is something that usually depends on what I have in the pantry. Isn’t it neat how easy recipes can be changed up when you have a stocked pantry or freezer? This would be a great recipe to use our Make Ahead Ground Beef to save time and clean up.
Ingredients:
2 lbs ground beef
1 onion, diced
1 large can diced tomatoes
2 cups water
3 cans beef or vegetable broth (1 Box)
4 carrots, diced
1 bay leaf
3 stalks celery, diced
1 teaspoon thyme
1 cup small pasta, barley or quinoa
parsley, salt & pepper to taste
Instructions:
Brown ground beef with onions
Drain before placing in crockpot
Combine all other ingredients in crockpot
Cook on low 8-10 hours
I make a pretty similar recipe at my house often. Using vegetable broth and quinoa instead of beef broth and rice would probably freshen it up for my family.
The title of this def made me stop and read it…I have never heard of Hamburger soup before. I live in PA so we do dippy eggs…is that the same as far as it’s a you know know because of “where you live” kinda thing?? Anyway…sounds good. Ill have to look into making this sometime when its not so hot out.

Oh my goodness! We used to have this all the time when I was growing up. Hadn’t thought of it in ages and had no idea there was a recipe. Yum!
