Cornbread Jalapeno Chicken Bites Using Chick-fil-A Nuggets
Oh let me count the ways I love Chick-fil-A Nuggets…I could and in all honesty probably do eat them at least five meals a week. One of the almost standard items in our fridge is a tray of nuggets off their catering menu. With the size of my crew, this is a no brainer for our house!
This week we were looking for bite size portions to use at our Sunday brunch. Cornbread Jalapeno Chicken Bites Using Chick-fil-A Nuggets was the favorite of the three items created. They have just a little kick to them but not so much that the little ones couldn’t enjoy them too. Of course, dipping them in the Avocado Lime Dressing just takes them over the top!
Because everything is cooked (except the onion), these little bites only take a minute or two to fry up. Quick and easy..two of my favorite words when it comes to cooking!
Ingredients
- 20 Chick-fil-A Nuggets, cut in half
- 1 Small yellow onion, diced
- 2 Jalapeno peppers, seeded and minced (leave the seeds if you want more heat)
- 2 Tablespoons chopped cilantro
- 1 Teaspoon ground cumin
- 2 cups shredded Monterey Jack cheese
- 2 Tablespoons all-purpose flour
- 2 eggs, beaten
- 1 cup cornmeal
- 1 cup breadcrumbs
- Oil for frying
Directions:
- In a medium bowl or shallow baking pan, combine the cornmeal and breadcrumbs
- In a larger bowl, combine the Chick-fil-A nuggets, onion, peppers, cilantro, cumin, cheese and flour and mix well
- Add 1 cup of the cornmeal/breadcrumb mixture to the large bowl, stir to mix
- Beat eggs and mix into the chicken mixture
- Roll chicken mixture into one inch rolls (bite size) and dredge through the cornmeal/breadcrumb mix to coat
- Using a Dutch oven or skillet, heat a couple of inches of oil over medium heat to 350°
- Gently place rolled balls in the oil and fry only until golden brown (1-2 minutes)
- Drain balls on paper towels for several minutes as they are HOT!
WARNING… these babies hold the grease for a few minutes so DO NOT pop one of these bad boys in your mouth as soon as they come out of the fryer…just don’t!

These sound good. I love hot peppers. I’m not fond of cornbread, so I’d probably use Italian breadcrumbs. That’s a good tip, not popping one in your mouth right away. There’s nothing worse than scalding the roof of your mouth. Ouch!
