Lightweight Pumpkin Latte
The only thing lightweight about this pumpkin latte is the calorie count. This is a wonderfully rich latte that can be enjoyed hot or cold. Using canned pumpkin also makes this a beverage you can enjoy all year long.
Ingredients:
1 cup Espresso or Bold Brewed Coffee (or 3 teaspoons of instant coffee and 1 cup warm water)
3/4 cup Processed Canned Pumpkin* (plain pumpkin, not pie filling)
1 teaspoon Vanilla Extract
1 teaspoon Pumpkin Pie Spice
1 teaspoon unsweetened cocoa powder
10-12 packets of Splenda Sweetener
3 cups Skim Milk (or unsweetened almond or soy milk)
Optional: Nutmeg for garnish
Directions:
Whisk together in a large bowl or in blender the coffee, processed pumpkin, vanilla, pumpkin spice, cocoa and Splenda until well blended
Heat the milk in microwave and combine with the coffee mixture
Pour into mugs
Top with optional dash of nutmeg or whipped topping
~ You can also used fresh pumpkin but process it in blender before adding the other ingredients
