Personal Caramel Pumpkin Pies

Personal Caramel Pumpkin Pies

These personal caramel pumpkin pies simply ROCK!!  If you like pumpkin pie you will love these. I like that they are single serving size and can be slipped into a baggie and placed in a lunch box. We made most of these with both the pumpkin and caramel but a few around here don't care for pumpkin (I know..shaking head).. so some were made with double caramels. Even if you are a pumpkin pie fan.. the ones with just caramel are just as wonderful!

Ingredients:
1 can Biscuits
8 pieces of Caramel (or more if you like lots of caramel)
1/4 cup canned Pumpkin Pie Mix
1 Egg Beaten
2 Tablespoons Sugar

Directions:
1. Line baking pan with parchment paper or treat with a non-stick spray
2. Pull each biscuit in half and place one piece of caramel and 1 spoonful of pumpkin mix on one of the biscuit sides
3. Pinch biscuit back together and press the edges closed to seal.  Pinch close or press with edge of fork.
4. Brush each biscuit with beaten egg wash and sprinkle sugar on top
5. Bake for 20 minutes on 375 (350 if using a dark pan) or until biscuits are done!

Let cool before digging in….the center is HOT!! REALLY HOT!!!

    Though I like the flavor, I am not the biggest pupmkin pie fan. I do love biscuity foods and the addition of caramel makes this a recipe that I will definitely try. It is the texture of pumpkin pie that is not to my liking, and this combination takes care of that. It seems like quite an easy recipe as well, and this is greatly appreciated!

    These are so Delicious sounding..My Youngest Daughter ( 38) and my husband both love pumpkin. I am definitely going to make these for the Holidays..I don’t care for Pumpkin pie but I like pumpkin rolls and cake..So I have to give these a try. I might make some double carmel just in case..       Yes. You can add any pie flavor. Because you are only cooking it just enough for the biscuit, the filling would need to be cooked. I don’t think it works as well with say sliced apples.

    Wow, I would have never guessed that all you need is ready-to-bake biscuits just going by the photo! They do look so much like a traditional pie or pastry with the sugar sprinkled on top. I like that caramel is added in along with the pumpkin pie filling as it probably adds a nice twist to the flavor! Thank you for sharing, these are a great alternative to pumpkin pie but just as delicious and very fitting for autumn holidays!

    Sorry, not all care for pumpkin…I totally would make mine with the double caramel, maybe a little sea salt.

    But, these Personal Caramel Pumpkin Pies do not have a great DEAL of pumpkin filling it sounds like; I think as long as the pie filling was spiced right, it’d be a big hit.

    So if you don’t like caramel (I know, I know… I’m weird), could you make them just plain pumpkin by increasing the amount of pumpkin to make up for the missing caramel?

      Oh yeah.. just add another spoonful of pumpkin or even jelly. You can add more filling and I am going to make them again this weekend with thin apple slices and caramel pieces…
