Pressure Cooker Red Pepper Tomato Soup
This is one of my favorite soup recipe. The flavor combination of the red peppers and tomatoes is a comfort food to me. My crew loves this soup hot or cold. It’s a quick but hearty soup that can be prepared in minutes in your Pressure Cooker or Instant Pot.
Ingredients:
1 tablespoon butter
1 tablespoon oil
2 white onions
8 red bell peppers
8 cloves garlic
4 medium tomatoes (or 2 canned fire roasted tomatoes)
2 teaspoons herbes de provence
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2-3 cups bone or vegetable broth
1/2 teaspoon salt
1/2 teaspoon pepper
Parsley or Cilantro for garnish
Directions:
Set up your pressure cooker and turn on saute setting
Dice onions while waiting for pressure cooker to heat up
Add butter and oil to pressure cooker
Saute onions for several minutes until they soften
Mince garlic gloves (or use jarred), add to pressure cooker
Dice red peppers and add to pressure cooker
Add diced tomatoes (or use canned)
Add herbes de provence, paprika, cayenne pepper, salt, and pepper
Stir to combine and allow to cook for several minutes (2-3 minutes)
Add 2 cups of broth and stir well
Secure lid and set venting button to close
Press cancel if using Instant Pot or off button on other pressure cookers
Press manual (or pressure cook) button and set time to 5 minutes
Once cooking time is complete, do a quick release
Blend soup in pressure cooker with immersion blender or remove to process in a blender
Add remaining broth as needed to obtain desired consistency
Season with additional salt and pepper to taste
Our favorite way to enjoy this soup is with chopped fresh toppings such as cucumbers, onions, squash, zucchini, cheese and sour cream. Serve up the bowls of soup and offer different toppings so everyone can make their own special dish.
It is just as good served as a chilled soup on a hot day.
