Roasted Yellow Onions
Whether you are a fan of onions or not, smelling them roasting away in the oven has to be one of my favorite scents that come from the kitchen.
Years ago my Granma taught me to roast yellow onions slowly over low heat. Cooking them this way brings out the sweet flavor. You would not know they were onions! She started cooking onions this way when her stash would start to get old and she didn’t want to waste the onions. It is a great way to use up produce and keep down the waste.
My favorite way to cook them is in my roaster pan from Swiss Diamond. This roaster is deep and has a lid that can be vented if desired. I normally place the lid on top for the first hour to help break down the onions and then remove it until they are the color and texture needed.
Once they have cooled, I am ready to dig in with a spoon but…I usually portion them off and freeze them to use in soups and other dishes.
Ingredients:
1 small bag of onions (yellow or white)
1 stick butter (or 2 tablespoons favorite oil)
Salt & Pepper
Directions:
Peel onions and cut in half (quarter if they are large onions)
Place onions in bottom of roaster and drop butter pats on top
Set temperature on oven to 250 degrees
Secure lid and close the vent
Place roaster in the oven and allow to roast for an hour
Remove lid, stir onions and return to oven
Continue cooking until the onions are the desired color and texture
Salt and Pepper to taste (optional if freezing)
Allow to cool in roaster and serve or divide into freezer safe containers or bags
If freezing, simply remove from freezer and toss into stews or dishes directly from frozen state. If wanting to use on a salad or in a dish that isn’t being cooked, allow to thaw and then process as you would normally. These are great in potato salad or on tacos.
