Sage Butternut Squash Risotto

Sage Butternut Squash Risotto

I love risotto. I don’t like the time or attention risotto requires in order prepare it properly.

One of our meals as part of the Hello Fresh Review box was a Sage Butternut Squash Risotto. Within the box was everything we needed to prepare the dish.

Ingredients:
1 cup Arborio Rice
12 oz. Butternut Squash (already cubed thank you!)
1 Onion
2 cloves Garlic (already peeled)
1 stalk Celery
1/4 cup Parmesan Cheese
1 sprig Sage (about 8 leaves)
1 stock cube

We had to pull out the butter and olive oil to complete the ingredient list.

The directions were standard for risotto, except that with the Hello Fresh Box you have a photo tutorial to refer to throughout the cooking process.

The butternut squash and sage were tossed in olive oil and placed in a 400 degree oven for 20 minutes until roasted brown and crispy.

While the squash was roasting, the garlic, onion and celery were diced. A pot of water with stock cube was brought to a boil and then dropped to simmer to keep warm while the garlic, onion and celery were sautéed in butter for 5 minutes in another pot.

Rice was added to the pot with the garlic, onions and celery cooked for 5 minutes until translucent. Stock was then added one cup at a time and stirred until absorbed. Once all the stock had been added to the risotto, it was removed from the heat, seasoned with salt, pepper and the parmesan cheese.

This was delicious!
