Sausage Italian Wedding Soup

Looking for a delicious soup now that fall is here? This is my go-to recipe when I need a filling soup but don't have all day to make it! Here is my family's sausage Italian wedding soup recipe!

1/2 pound sweet OR hot Italian sausage, casings removed
1 small onion, finely diced
1 clove garlic, finely diced
1 14.5-oz. can chicken broth
2 small zucchini, chopped
2 cups kale, chopped (any greens will work)
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/2 teaspoon salt
Dash crushed red pepper flakes, to taste

In a large pan or Dutch oven, brown and crumble sausage over medium heat; add onion and garlic; cook and stir until soft, about 3 minutes. Add remaining ingredients; bring to a boil, lower heat and simmer for about 8 to 10 minutes.

Serves 4-6
