Sea Bass with Cherry Tomatoes & Sweet Peppers

Sea Bass with Cherry Tomatoes & Sweet PeppersIf you are a fish lover, this sea bass with cherry tomatoes and sweet peppers should be on your regular menu. Sea Bass is a light, white fish that absorbs the flavors of the ingredients used on it. One of my favorite ways to cook it is broiled with sweet tomatoes, sweet peppers and onions. 

Sea Bass with Cherry Tomatoes & Sweet Peppers

 

Ingredients:

1 shallot or small sweet onion, thinly sliced
2 cups cherry tomatoes
1/2 cup sliced sweet pepper
1/2 cup sweet banana pepper slices
2 Tablespoons olive oil
Salt and Pepper
4 6-ounce fillets sea bass or other white fish

Optional:
1/2 cup chopped olives
1/4 cup pesto or fresh basil leaves

Sea Bass with Cherry Tomatoes & Sweet Peppers

Directions:

1. Set oven rack to second shelf and turn on upper broiler to high.
2. Lightly spray an oven proof baking dish or casserole pan with non stick spray or butter.
3. Place layer of thinly sliced onions in pan.
4. Set sea bass (or other white fish) on the onions in the dish and liberally salt and pepper both sides.
5. Arrange the tomatoes, sweet peppers, and banana peppers around the sea bass (or other white fish).
6. Drizzle the olive oil over all the dish
7. Place baking dish in oven under broiler for 10 to 15 minutes. The tomatoes will start to burst open. The sea bass will be opaque and start to flake when pulled at with a fork.

Optional:

Try tossing in a handful of chopped olives, pesto or basil leaves for a unique change.

 

Serve over rice or along side our bacon wrapped asparagus.
