Slow Cooker Carnitas

Slow Cooker Carnitas

Carnitas (pork for the rest of us) is so tender when it is cooked in a slow cooker all day. It just falls apart when you pull it with a fork. I love that this is so easy to fix and let cook all day while we are out running errands. I have set this up to cook overnight when we needed to take a hot lunch with us to the ski slopes or other daytime event. 

Ingredients:
3 pounds Pork Roast
3 cloves of Garlic, minced (more or less depending on how much you like garlic)
½ teaspoon Salt
½ teaspoon Black Pepper
1 bunch Cilantro, chopped
1 cup Salsa, (your choice of heat)
1 cup Chicken Broth/Stock
4 ounces Mild Green Chilies, Diced, Canned (with tomatoes is good too)

Directions:
Remove any visible fat from pork and cut it into chunks so it will all fit in bottom of your slow cooker.
Combine garlic, salt and pepper in a bowl. Rub this mixture all over the roast before placing it in the slow cooker.
Toss in the cilantro, salsa, broth and chilies to the slow cooker.
Cover and cook on low for 6-8 hours (or longer).
Lift roast out of the slow cooker and shred it into little pieces with a fork.
Return to slow cooker to keep warm until ready to serve.

Serve on slider buns or with tortillas and fixings. The best part of this meal are the left overs! Serve the meat over a salad for a delicious lunch.
