Slow Cooker Coconut Caramel
Slow Cooker Coconut Caramel

Coconut Caramel is the most creamy, delicious mouthful of pure joy! It is wonderful on just about anything, including.. wait for it.. a spoon! HaHa.. that was the answer when I asked my daughter what was her favorite way to eat it. “On a spoon of course!” This has to be the easiest way to make caramel short of buying it in a bottle! While it isn't the fastest, it is one of those start and forget slow cooker wonders that I love to use!

Slow Cooker Coconut Caramel

Ingredients:
2 cans sweetened condensed coconut milk (Nature's Charm is amazing!)Slow Cooker Coconut CaramelDirections:
1. Be sure to remove your label from the can and place parchment paper under the cans on bottom of your slow cooker. (Not required but it does help keep your slow cooker liner from being scratched)
2. Place cans in slow cooker on their side (this is because of height of most cookers)
3. Fill slow cooker with water (go ahead and fill it all the way so you can forget about it)
4. Cook on low for 10-12 hours (the longer the deeper color of caramel)
5. Turn off slow cooker and allow to cool in water for at least 1 hour (until room temp)
6. Once you can handle the can with your hands, open and pour caramel into an airtight container and store in refrigerator until ready to use. Microwave to warm.

Directions are the same for 1 can but two cans fit nicely in my slow cooker.

That's it! I did pull one of the cans at the 8 hour mark but it wasn't as dark and creamy as the last one that cooked for a little over 12 hours. So worth the wait!

Uses:
1. Awesome in coffee
2. Fantastic over any pie, cake, cupcake, muffin, etc., etc. ….
3. Comfort by the spoonful
