Smashed Red Garlic Potatoes

Smashed Red Garlic Potatoes

 

 

These smashed red garlic potatoes have to be one the favorite at any meal! Red potatoes are so tender and full of flavor. Add in the garlic and butter and oh my… they are delicious.

Ingredients:

10-12 Red potatoes

½ to 1 stick Butter

½ to 1 cup Milk

½ to 1 teaspoon crushed or minced Garlic

Salt and Pepper to taste

 

Wash and cut the potatoes in half. Place potatoes in large pot and cover with water. Make sure to cover by a couple of inches for cooking room.

 

Set heat to high in order to get the potatoes boiling. You can put on a lid on it, but stay in the room so it doesn't boil over. When it starts to boil, reduce the heat to simmer and cook until fork tender (about 15-20 minutes)

Drain completely and place either back in the pot or into a large bowl for smashing.

At this point you can add the butter to the hot potatoes or you can heat the butter (start with about ½ stick) and ½ cup of the milk in the microwave.

Add garlic, salt and pepper. Potatoes require a good amount of salt and pepper. You can always add more at the table if needed. Using your potato masher, start smashing, crushing and twisting the mixture together; continue until it reaches the desired consistency. Add more butter and milk as needed or desired. (Using an electric mixer will turn your potatoes into a wall paper paste…NO NO NO!!)

 

Tip:  These can be made up to an hour before lunch if you will place in a crock pot on low with a little butter on top to keep them from drying out. These can also be placed in an oven on 160.

Stir to fluff before serving. Add more butter or a little milk if needed. Serves 6
