Sunnyside Up Hash with Apple Maple Chicken Sausage

Sunnyside Up Hash with Apple Maple Chicken Sausage

Give me a plate of hash with potatoes and onions and I am one happy camper. Mix in sausage and you can invite me to breakfast anytime. Top it all with a Sunnyside egg over an English muffin and you will have me inviting you to make me breakfast!

All kidding aside, this is a super dish to prepare on those mornings when you are looking for a quick yet filling option. The recipe below is just for one but can made in larger batches for the entire family.

Ingredients:
1 teaspoon butter
1/2 onion, diced
1 red potato, diced
1 stalk celery, diced
1 link apple maple chicken sausage, diced
1 egg, fried Sunnyside up
1 English muffin, split and toasted
Salt & Pepper to taste

Directions:
Cook butter, onion, potato, celery and sausage in a small fry pan over medium high heat. Cook until potato is tender.
Place toasted English Muffin half on plate and pile high with the onion, potato, celery and sausage mixture
Gently place fried egg on the top of the sausage mixture
Salt & Pepper to taste

Break the yolk and enjoy this wonderful hash and muffin breakfast!

The hash portion of onions, potatoes and celery can be prepared the night before and warmed with the sausage in the microwave while the English muffin is toasting. This is another thing I love about these sausages..they are precooked and can be popped in the microwave as needed.
