My husband is a type 1 diabetic and before I meet him I didn’t know anything about diabetes. It is so much harder to handle than I could have ever imagined. Cook books like this have been extremely helpful as he can’t have half of my favorite recipes. However, I have found that we have to be careful with them because too much of anything can be bad for diabetes. We have also learned that some ‘healthy’ food is actually worse for him. For example wheat breads leads to spikes in his blood sugar so we stick to white. Has anyone else found that to be true? Thank for sharing this great new book with us!
