Vegetable Relish Tray
Looking for a way to get your children to eat fresh veggies? Try a colorful vegetable relish tray with their favorite ranch dipping sauce. Children young and old will not be able to keep themselves from nibbles while waiting on dinner!
This can be made from any vegetable in season or that you enjoy. We have standard items that the family has enjoyed for years.
Ingredients:
Cucumbers (sliced – peeled if you want)
Pickles (we like the dill – but sweet, bread & butter or spicy are great too)
Bell Peppers (The Red, Yellow and Orange ones are sweeter – sliced)
Olives (black or green or both – drained)
Green Onions (cut off root end and tips… peel back a couple of layers of green to clean)
Carrots (baby are easiest – or peel and slice whole ones into finger length)
Squash (yellow or zucchini – sliced into rounds)
Any other vegetable your family likes or is in season (radish, celery, etc)
Arrange in a relish tray or on a platter. I usually set out half in the relish tray and store extras in baggies to refill as needed. This keeps some of the items cold and crisp. It is also a good way to slow down the children (and adults)…as they are plowing through the goodies!
