Chocolate No Bake Cookies

Chocolate No Bake Cookies

Mmm, chocolate no bake cookies. This is the most often made cookie in our house.  It is also the one that my girls make whenever they are asked to bring a dish to a party. Oh, and they are so addictive it isn’t funny!

Think crunchy fudge – or that’s what I think when I enjoy them. These bad boys are almost fool proof BUT..if you over cook the mixture it becomes crumbly. Does NOT change the taste, but it does change the consistency.

Ingredients:
2 cups sugar
1/3 cup cocoa
1 stick butter
1/2 cup milk
1 tablespoon vanilla
3 cups oatmeal
Foil or Parchment paper

Directions:

In a large stock pot, melt the butter and then stir in sugar, cocoa, and milk
Bring mixture to a boil, stirring constantly
Once at a rolling boil, continue cooking while stirring constantly for three minutes
Remove from heat to a solid place and quickly stir in vanilla and oatmeal
Drop bite size cookies by scoop or spoon on foil or parchment to cool (They will harden as they cool)

One note:
Be careful when you add the vanilla as the mixture will bubble up before settling down

    I appreciate that you go above and beyond when posting recipes. I’m not a good cook. I’ve even been asked to not cook. Which is okay with me! But anyways, instead of just listing ingredients, you give helpful hints. Not many people do that.

    I grew up eating these in school and helping my mom make them at home.
    I still make them regularly in our home but with my husband and kids they don’t last long at all. They are always so yummy.

    Yum. My mom makes no bake cookies similar to this. Hers has peanut butter in them but no vanilla. I may just have to try this variety.
