Chocolate Chip Oatmeal Quick Bread in a Jar
Have you ever made the yeast bread that you have to keep on the counter for 10 days and add items every couple of days? At the end of 10 days you get to make some of the most delicious cake like bread that never lasts the afternoon… am I right?
Well this Chocolate Chip Oatmeal Quick Bread is that and more! My crew is divided on whether it is a bread or a massive cookie.
The recipe is just enough for one quart jar. If you need to make more than one gift, make them one at a time. The consistency has always been better when we don’t double or triple the recipe.
Ingredients:
1 quart canning jar with lid and band
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup brown sugar
1/2 cup chopped walnuts
1 cup rolled oats
1/2 cup granulated sugar
1/2 cup miniature chocolate chips
Directions:
Combine the flour, baking powder, baking soda, cinnamon and salt in a medium bowl and whisk to blend
Gently spoon or pour flour mixture into jar and press down
Layer the remaining items making sure to press down between items
Seal with lid and band
Create a label with the following cooking directions

Heat oven to 350
Prepare a loaf pan or 8×8 pan with foil or nonstick spray
Gently dump contents of jar into a large bowl
Whisk together 1 1/2 cups buttermilk, 2 eggs, and 1/4 cup melted butter
Slowly stir in the wet mixture into the jar contents until blended (don’t over mix)
Spread mixture into pan and bake 45-50 minutes and a tooth pick inserted in the center comes out clean

I have always wanted to try these ingredients in a jar gifts. They look like a wonderful idea for gifts for any occasion. I love baking quickbreads and often give them as gifts. This has got to be delicious. And it has oatmeal so it’s healthy, right? I think I would use a bigger jar and double the amount of chocolate chips!
