Mini Caramel Apple Bites

Mini Caramel Apple Bites

Apples, caramel and crushed nuts make these Mini Caramel Apple Bites simply amazing! They are a tad labor intensive, but so worth it. Decorating them can be as simple as dredging through crushed nuts or rolling in a pile of coconut flakes. Super dessert or treat to make ahead. 

Ingredients:
4 Large Apples
25-30 pieces of caramel (or make your own)
Several Spears, Straws or Skewers
Assorted toppings to decorate apples (melted chocolate, crushed nuts, mints, sprinkles)

Directions:
Wash and dry the apples
Cut the apples into quarters and remove the core and seeds
Take a small melon scooper and scoop out balls of apple (you will get 2-3 out of each quarter) – pat dry the apple balls
Place caramel pieces over low heat in small sauce pan and heat until melted – do not overheat
Remove caramel from heat and place on hot pad next to your apple balls
Stab your apple balls with your spear, straw or skewer (stab into the middle to keep it from falling off)
Quickly dip the apple ball in the caramel. Tap stick on edge of pan to remove excess caramel – if you find that the caramel won't stick to the apple ball, dry off the ball before dipping into the caramel.
Immediately drop into the topping of choice and roll around to cover completely
Once covered, place on a foil or parchment lined tray and allow to set up
Decorate with drizzled chocolate or a combination of chocolates if desired

Once these set up, they can be packaged in a gift box or basket. Talk about a sweet gift for someone!
These can be stored in the refrigerator for several weeks. Great to make ahead and have on hand.  I haven't tried freezing them yet….they never last long enough around here! Another way to make these is with cherries, brownie balls or banana balls.

    Mmmm!!! Caramel apples are my favorite treats but boy are they a pain to eat!! These sound much easier and look so delectable!! I should make these for my sons birthday party!!

    Your Mini Carmel Apple Bites are to Die For! They look so Pretty & Delicious! Another Plus is the center is solid apple so I won’t feel so bad when I eat them! Lol!     om goodness, I have to make these. I absolutely love caramel apples. These seem so nice and easy and I’ve never thought about doing them this way. My daughter has a chocolate allergy so I am always looking for things for her and these would be really different.
