Lemon Rubbed Salmon

Lemon Rubbed SalmonDuring the week, I like our dinners to be quick, but they still have to taste good! We love fish – especially salmon. This is our favorite way to prepare it. Quick and Easy Lemon Rubbed Salmon that you can cook on the grill or in the oven!

 

Ingredients:

1/4 cup fresh rosemary, chopped (read how to process fresh rosemary)
4 cloves of garlic, pressed or finely chopped
1/2 teaspoon salt
1/2 teaspoon lemon pepper (or plain pepper)
1 tablespoon olive oil
4 salmon fillets, about 4-6 ounces each
2 lemons, 1 lemon cut into wedges and the other squeezed to use in paste

Directions:

Combine rosemary, garlic, salt, lemon pepper, juice from one lemon, and oil in a bowl to make a paste.
Spread the paste on each salmon fillet (non the skin side).
Allow the rubbed salmon to rest and absorb the seasonings in the paste for a while before grilling. (You could prepare these several hours ahead and place back in the refrigerator covered)
Heat the grill or broiler.
Cook on the grill* or under the broiler until the salmon flakes with a fork. The rule of thumb for cooking any fish is about 10 minutes per inch thickness of meat.
Serve with lemon wedges.

If you are grilling, make like easier on yourself and use a grilling rack, grilling pan, or grill mat. Believe me, you will thank me for this! If broiling, make sure to foil line your pan for easy clean up.

    This sounds so good! And I love rosemary, too. I typically douse salmon with maple syrup, I want to try something new!!! I love it!
