Breakfast Burritos with Apple Maple Chicken Sausage

Ingredients:
1 teaspoon butter
1/2 onion, diced
1 red potato, diced
1/2 stalk celery, diced
1 link apple maple chicken sausage, diced
1 egg, scrambled
1 pinch of shredded cheese, your choice of type
1 flour tortilla
Salt & Pepper to taste

Directions:
Cook butter, onion, potato, celery and sausage in a small fry pan over medium high heat. Cook until potato is tender.
Place flour tortilla on plate and spread onion, potato, celery and sausage mixture down center from edge to edge
Scramble egg and place on top of sausage mixture
Top with shredded cheese
Salt & Pepper to taste
Roll up tightly and place seam side down on plate to rest for a minute or two as everything  binds with the melting cheese
Slice in half and serve

Optional:
If you are not taking off in the car, serve with salsa and sour cream
Fried eggs also work in the burritos but you have to watch for yolks running out ends while eating

Note:
This recipe is for just one burrito. Increase units to make a platter for a brunch or fellowship meal

I just ate breakfast burritos this morning. I don’t get them all that often, but I really enjoy them when I do. I’ll have to try making them myself the next time a craving strikes. Pinned it. Thank you!

Yum-oh! I bet you could add a bit of shredded apple too to make the flavor even more distinct.
