So many people these days are eating gluten-free, whether it’s because of an allergy or just a healthier lifestyle choice. While we don’t eat gluten-free in my house, we do try to make better choices. Not always the best choice, but better than the alternative. Desserts are a staple here, with several generations that come and go by the kitchen table on a daily basis! It all began in 1992 when Miriam “Nana” Diamond was inspired to create a moist and chewy cookie that not only tasted delicious, but was baked with ingredients she enjoyed giving to her friends and family; a cookie sweetened with natural fruit juice, rather than refined sugars, that was packed with flavor.
After receiving rave reviews from friends and family she started her own cookie company. She would have a variety of goodies, but the one thing I always looked for was her pineapple cookies!! They were amazing! She has since passed on so I have had to search for a recipe near to hers.
