Easy Apple Bread Pudding
Bread Pudding has to be one of my favorite desserts.
It is also one of the dishes that I have NEVER been able to make at home to rival the restaurant offerings… until now!
Ingredients:
1 loaf Cinnamon Raisin Bread – cubed
3 eggs – beaten
2 cups milk or cream (I used 1 ea of milk and half n half)
1.5 tsp rum extract
1/2 tsp salt
1/3 cup brown sugar (I use half brown sugar and half splenda to reduce sugar)
1 can apple pie filling (used no sugar added) (would suggest cutting apples into smaller pieces)
2 packets of instant oatmeal (used 1 apple cinnamon and 1 maple/brown sugar)
Cube bread and set aside (Next time I would spread out on cookie sheet and either toast briefly or let sit on counter for couple of hours to help hold shape)
In large bowl, mix everything else together.
Gently fold in cubed bread and let sit for 10-15 minutes to soak.
I will try pouring over bread cubes in baking 9/12 pan and just let soak up without stirring (don’t like it mushy) – just personal preference.
Bake at 350 for 50-60 minutes until brown, bubbly and cooked through ~ custard is set.
Serve with topping of choice… cool whip is excellent… or whip your own and add a drop or two of run extract!
Shaved chocolate would add just a little something special to it! LOL
