Easy Chili Con Queso

Easy Chili Con Queso

Dip Dip as the little ones call it, is the highlight of any meal for my crew. I often wonder how they can eat their meal with all the Chili Con Queso and chips packed away while waiting on the food. 

One of the little ones asked if we could have it for dinner the other night and while I didn't serve it as the meal, I did make enough to feed a small town! It was a hit at our fellowship meal on Sunday following morning services.

Ingredients:
1 yellow onion, diced
4 Tablespoons butter
1 lb. breakfast sausage
1 box Velveeta cheese – cut into cubes
1 can green chilies
1 can diced tomatoes – with or without chilies

Directions:
1. Cook onions in butter on medium heat until soft but not browned
2. Add sausage to onions and cook until done, drain and return to pan
3. Add chilies, tomatoes and cheese to sausage/onion mixture and reduce heat to low
4. Simmer until cheese is melted

So simple…but so good!

I tripled this on Sunday and it filled my crockpot to the brim! Good thing that puppy has a locking lid. I can’t imagine trying to drive with that splashing around in the back of the van.

You can also toss the meat/onions once cooked into the crockpot with the rest of the ingredients and cook on low for several hours. Depending on the settings for your crockpot, you may need to drop the heat to warm. If it gets too thick add a jar of salsa to thin it down.

    Why not serve this with Vegs? I would use carrots, celery, green onions with some tops and any thing they really like.

    I’ve never tried this. I like chilli with hot Italian sausage and ground beef. Lots of fresh veggies and hot peppers. I also like a Mexican blend cheese.

    I almost always add cheese to my chili. I have never made it in a crockpot though. Thanks for the recipe!

    Dip dip! Still love it even as a grown up.

    This was a hit for my little guy on Sunday when you brought it. He didn’t want the plain chips after he had the dip on them!!
