Goat Cheese & Red Pepper Stuffed Peppers

Goat Cheese &Red Pepper Stuffed Peppers

This chilled finger food Is another favorite on my three ingredient list of quick and easy appetizers. This can be made ahead of time and is a combination of sweet and spicy that you will not be able to stop eating!

Ingredients:

1  package of your favorite goat cheese
1 jar of roasted red peppers (drained – really drained)
1 bag baby sweet peppers

Directions:

Drain red peppers and combine with goat cheese in food processor
Pulse until blended but still chunky
Wash baby sweet peppers and slice in half lengthwise, remove seeds
Fill each half of pepper with cheese and pepper mixture
Keep chilled in the fridge until ready to serve

Another way to make these is to completely puree the cheese and peppers and just cut the tops off the baby sweet peppers before filling with the cheese mixture. Replace the cap and store in fridge until ready to serve.

These travel well and can be skewered with fancy tooth picks to dress them up a bit.

    I have never tasted goat cheese. I enjoy peppers and have had them with Gouda and Havarti. So, I imagine this is pretty tasty.

    Is there a brand of goat cheese you can recommend to me? I have not made many things with goat cheese before but I would like to try it. It sounds delicious.

      I prefer plain goat cheese to the flavored. Ask your deli worker for samples. They will be able to let you try different brands.

    I adore peppers of any kind. I am vegan so that leaves me out with the cheese but I think I can substitute my own version of cheese and still enjoy this recipe. So awesome! Thanks for the idea!

    Do they have to be roasted? Or maybe boiled peppers would work too?

      I like using the roasted from the jar but you could simmer until soft and process with a little oil to make your own.
