Marinated Cucumber, Onion, Tomato Salad

Marinated Cucumber, Onion, Tomato Salad

Need a light salad or quick extra dish? This is my go to dish for last minute meals or when we need a quick side dish to lighten up any meal.

Ingredients:

  • 1 large onion (your choice of color), sliced into strip or rings
  • 2 large cucumbers, peeled or not, sliced 1/4 inch thick
  • 2 large tomatoes, cut into wedges
  • 1/2 cup vinegar
  • 1/4 cup oil (I like to use grape seed oil)
  • 1/4 cup sugar
  • 1 cup cold water
  • 2 teaspoons each salt and pepper

Directions:

  • Place cucumbers, onion and tomatoes in a large storage container (something with a lid)
  • In a jar or bowl whisk together the remaining ingredients (stir until sugar is dissolved)
  • Pour over cucumbers, onion and tomatoes and gently toss until well coated

Store in refrigerator until needed. Needed being the optimal word; my crew starts eating this as soon as I put the spoon down.

We like to top with parsley and minced garlic. Red Pepper flakes also add a little pep to the dish.

    This is a great recipe. Sometimes to change it up a bit I add green pepper and radishes.

    My mom used to make this all the time. She just threw it into zesty Italian salad dressing. It’s pretty good. Especially when you make it with home grown vegetables.

    I love marinated salads. The longer they sit the yummier they taste. But I can never wait too long usually 30 minutes tops. I’m definitely going to make this soon.

    This recipe really reminds me of summer. I put my first garden in a few years ago and got to make this the first time all with plants I had grown. It was so exciting. I never tried it with sugar though.

    This looks so yummy! I think I’d skip the parsley, minced garlic, and red pepper flakes, but I like things simple! It looks perfect for a summer salad, I’ll have to try this, thanks for the recipe!

    I make this, too, but use sour cream instead of the oil & vinegar. I’m gonna try this when the garden gets going. Sounds as good or better than the sour cream.

    Just love how easy and taseful this is. I make this in the spring when I can get the tomato, cucumbers and onions from the farmers market. You can try this with green onions when they come out at the market a just a little difference.
