Simple Lemon Poppy Seed Bread
This has to be one of the best Lemon Poppy Seed Bread recipes that I have found. Using the cake mix makes it just too simple.
Ingredients:
1 box Lemon Cake mix (sugar free type also works)
1 teaspoon Almond extract (I have added butter and or lemon extracts for more flavor)
1 box Lemon or Vanilla Instant Pudding (large box or use 2 small boxes)
4 eggs
1 cup water
2 Tablespoons Poppy Seeds
3/4 cup Vegetable Oil
Directions:
This is what makes it my Simple Lemon Poppy Seed Bread – mix it all together in a large bowl until smooth….and bake in oven proof casserole dish* on 350 for 30-40 minutes (until toothpick is clean when placed in center of loaf).
That’s it! It doesn’t get much easier than this one… It also makes killer muffins. I usually make this is a larger pan that is not as deep (9×13) or divide into 2 loaf pans.
*If not using a non stick pan, make sure to grease with spray or butter.

I have never attempted to make lemon bread but it is oh so yummy. But lemon poppyseed bread. Even better. I never would have thought cake mix and pudding mix would be used! I am totally going to make this soon.
