Southwestern Crock-Pot Meatloaf

If you are looking for a quick and wonderful crock pot meatloaf…this is it! We call it our Southwestern Crock-Pot Meatloaf.

1 pound ground beef
1/2 cup frozen whole-kernel corn (or can / drained)
1/2 cup picante sauce (or salsa)
1/4 cup minced fresh cilantro
1 tablespoon chili powder
1-1/2 teaspoons ground cumin
1 large egg, beaten
1/4 cup ketchup

Combine all ingredients, except the ketchup in a large bowl; mix well.

Mold meat mixture into the bottom of a lightly greased crock-pot and brush ketchup over the top.  Cook on low 8-10 hours or high 4-6 hours.
Serves 4
