So one of my favorite local pastry shops adds an extra special touch to most of their sweet baked goods. I could never put my finger on it, and it became a guessing game every time I went in; I’d wager my guess, got told I was wrong (with a chuckle and a smile) and I’d try again the next time. Then I figured out what it was…sweet orange essential oil!

It turned out that for some of their treats, they would use orange peel straight into the batter or icing. But sometimes, they wanted to have the flavor without the flecks of color. So they began using sweet orange essential oil which I think is genius!
