Tomato, Cucumber, Onion Salad

Tomato, Cucumber, Onion Salad

 

This is my go to salad when dinner needs something fresh or just a little more crunch. Oh, and in the summertime when the vegetables are fresh…it could be dinner for me!

Ingredients:

2 ripe tomatoes
1 large cucumber
1 white onion

Directions:

  • Dice above and combine in large bowl
  • Season with salt & pepper
  • Allow to chill for an hour to allow flavors to blend

 

We like this salad just like the above and enjoy eating it alone or on any number of dishes. It is also great with a little Italian or Poppy Seed salad dressing.

    We make this salad too! Sometimes we add fish sauce or red wine vinegar.

    This is a staple dish at our house during the summer and fall when I always have too many tomatoes lying around from the garden. Plus its easy to prepare, I don’t have to turn the oven on and heat up the house, and it’s de-lic-ious!!!

    This salad is a great idea, and so easy to remember. If you add chick peas, you can get some protein for a meal. Thanks for sharing!

    My Grandma made this and had Italian Dressing mixed with it. I love this salad it’s so crisp and fresh, I make it with fresh veggies out of my garden!

    Love this salad, now I go to the farmers and craft market and get the fresh veggies. If I can’t find something like say regular tomatoes I’ll use yellow or small tomatoes. Was surprised to find this one here. I think I’ve uses this 45+ years.

    This is a great salad. One other way to try is to let all ingredients soak in white vinegar overnight. My grandmother did this and it adds a zing to any meal as a side dish.

    To be honest I do not like any of these 3 things…lol. But they do grow great in our garden. I’m thinking this will be a great addition (and so easy) at our summertime BBQ’s and parties. Thank you!!
