I enjoy a good pot pie! One with a seasoned crust and lots of veggies simmering in a rich white cream sauce. Yummers any time of the year.
3 small potato (I used yellow as they are sweeter), cubed – skins on
16 oz mixed veggies (I used frozen bag)
1 small onion, chopped (ended up using half because it just looked like a lot of onion)
1 tsp poultry seasoning – I used grill mates but would suggest adding salt, pepper and garlic to taste
1 lb cooked cubed/shredded chicken (I used Tyson grilled)
3 cans cream of whatever (I used 1 celery, 1 mushroom, 1 chicken)
In a large bowl, combine everything.
Pour into a 2.5 – 3 qt pan and cover with foil. Place on a foil covered cookie sheet in case it bubbles over.
Bake at 350 for 90 minutes or until all bubbly and cooked through (check potatoes and onions to make sure cooked completely)
Remove from oven, remove foil. Place canned biscuits on top, sprinkle cracked black pepper on biscuits and return to oven until biscuits are done (15-20 minutes).
******************Notes: If in a hurry I would use canned potatoes or the bagged frozen veggies that have them included. They are the reason this take 90 minutes to bake. Also, if using frozen chicken that is seasoned, watch what is added as it may be over doing it with salt. Could be why the recipe didn’t call for additional.
Black Pepper on biscuits added wonderful depth to flavor but of course was the first thing the kids saw! Ewwwwww I don’t like pepper was heard throughout the house! So pick off the top layer of flaky biscuit and away you go! Using biscuits was easy, but the topping is a but much for my preference. Would try even halving the biscuits next time. Salt, pepper and certainly garlic need to be added before baking. The 1 tsp of chicken/poultry seasoning called for in recipe was not even close on the flavor level that I would want to serve.
