Crockpot Potato Soup

Crockpot Potato Soup

 

Other than stirring this soup a couple of times as the frozen potatoes thaw; this has to be one of the easiest potato soups around! Using the seasoned, frozen potatoes makes all the difference in the taste and the ease in making this soup. Because of the cream cheese, this doesn't freeze well. Leftovers can be blended and used as a dip.

Ingredients:

  • 1 26-30 oz bag frozen cubed hash-brown potatoes
  • 1 onion, diced
  • 2 cans of chicken or vegetable broth (or 1 box)
  • 1 can cream of chicken soup (or our Cream Soup Mix)
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 block Cream Cheese (softened)
  • 1 cup shredded cheese (optional – your choice)

 

Instructions:

  • Place potatoes, onion, broth, soup and salt/pepper in the crockpot
  • Cook on low for 6-8 hours or until potatoes are tender
  • 30 minutes before serving, cut cream cheese into eight pieces and stir into soup
  • Right before serving, stir well and taste for seasoning

Options:

  • My crew likes the shredded cheese added right at the end of the cooking time
  • Top your bowls with shredded cheese and more fresh onions – my favorite
  • Toss in a bag of broccoli florets for a cheesy broccoli potato soup

    Ooh this looks amazing! I love crockpot recipes and soup no matter what time of year it is. I’ll be giving this a whirl this week, as I have potatoes I need to use up soon. Pinning now! 😀

    Our family are HUGE tater soup lovers! My father in law lives with us. He is in his late 80’s and even in summertime wants me to fix tater soup for him. The crockpot is the only way to go during summer time when making soup. I will defiantly try this recipe ! I LOVE the idea of using leftovers as a dip! VERY CLEVER !

    I love soups – especially creamy ones!! I will try this – it sounds good, healthy, & easy, with not a lot of clean-up. I think I will even add the broccoli florets also.

    I made a recipe similar to this during the fall and winter seasons this year and it was amazing! Such a perfect meal during those cold days and a great way to warm up. Something about it makes meal time cozy and comforting…I would recommend this to anyone!

    yumy – I wish I’d found this when it was still cold out! I’ve only fairly recently discovered the simple joy of the crock pot, and I can imagine the smell of this cooking in my house for part of the day would be amazing!
