Gingered Salmon
We love seafood in my house. And fresh fish hot and flaky from the oven is usually on the menu! I love how fast it cooks and you can marinate it a dozen different ways. Here is how we make gingered salmon.
Ingredients:
4 – 6 salmon fillets
1 cup pineapple juice
2 tablespoons soy sauce
2 teaspoons ginger root, peeled, and grated (If using dried, cut in half)
1/4 teaspoon pepper
Directions:
In a large zip-lock bag, combine all ingredients except fish.
Mix well and add the fish.
Seal the bag and turn several times to make sure all the pieces of salmon are covered in marinate.
Allow to marinate in the refrigerator for 15- 20 minutes.
Pre-heat oven broiler on high.
Remove fish from bag and place fish on a lightly greased broiler pan.
Cook for about 8 to 13 minutes or until fish flakes easily with a fork.
Remove from pan and keep warm.
Place marinate from baggie in a saucepan. Bring to a low boil and cook for about 3-4 minutes or until thickened. Serve over fish.
Salmon is our favorite fish to cook at home. It can be used in so many dishes and holds up well to handling. Broiling it is the easiest way when making for a large family but you could also grill over medium high heat. If grilling outside, I would suggest using a grill basket to keep the pieces from falling apart as they get cooked.
We normally serve our gingered salmon over rice with roasted root vegetables or quinoa salad. Even the little ones enjoy the delicious ginger flavor.
