Potato Nests

Potato Nests

 

These little nests are great for breakfast or a simple brunch dish. They cuddle eggs or other toppings and are so super simple to make!

Potato Nest

Ingredients:

1 20 oz. package pre-shredded hash brown-style potatoes (plain or seasoned – not home fries)
2 large eggs, lightly beaten
1 small grated onion or several green onions finely chopped
1 cup shredded Cheese (mozzarella, cheddar – your choice)
1/2 cup Parmesan cheese
Salt and freshly ground black pepper to taste (potatoes take a good amount of salt)

Directions:

Preheat the oven to 400 degrees and lightly spray a 12-cup muffin tin with non-stick cooking spray.

Combine the ingredients together in a large bowl.  Divide potato mixture into each prepared muffin cup and press down into the cup and up the sides of each cup to form a “nest”. It really is easiest to just use your fingers!

 

Potato Nest

 

Bake until golden brown, about 25-30 minutes.

If you find the nest has filled (puffed up) in too much in the center, press down before cooling or scoop out a little with a spoon.

 

These little goodies can be made ahead and frozen. Just warm when needed. Great for a brunch line!

    These are perfect. Might even work for our Kids and a Mom in the Kitchen time this week.
