Shrimp Scampi
Having lived by the shore most of my life, I sure do miss fresh and good seafood now that I live in the Midwest. But I love finding recipes I can make at home to enjoy fresh seafood when we can find it, like this one for shrimp scampi!
Ingredients:
2 cloves garlic (or more to preference) — finely chopped
5 tablespoons olive oil
1 tablespoon butter
1 pound (or more) large shrimp — peeled and cleaned
2 tablespoons dry white wine (or use white grape juice)
2 teaspoons lemon juice
2 teaspoons minced parsley (or use cilantro)
1/8 teaspoon oregano
salt and pepper to taste
Directions:
Heat oil and butter over medium high in skillet
Season shrimp with salt and pepper to taste
Add garlic and shrimp to cook for a couple of minutes (just 2-3 minutes), turning often. Cook only until pink.
Add the remaining ingredients and continue to simmer in juice until thoroughly heated – be watchful so you do not over cook the shrimp.
Serve on rice or noodles (our favorite way to eat it) and top with parsley or cilantro.
This combination of seasoning is awesome as a marinade for the grill or to place under broiler.
