Chicken with a Ginger Cream Sauce
Adding a simple cream sauce to any protein seems to dress it up. This ginger sauce is so simple and easy to make. It would be great on any protein!
Ingredients:
4 boneless skinless chicken breasts — (pound flat or butterfly open)
2 teaspoons butter
salt and pepper — to taste
2 tablespoons grape juice or wine
2 tablespoons fresh lime juice
1 teaspoon grated fresh ginger root (if using dried – cut amount in half)
1/8 teaspoon cayenne pepper (to taste)
1/2 cup chicken broth
1/2 cup half and half
Directions:
1. Sprinkle salt and pepper on both sides of chicken
2. Cook chicken over medium high heat in skillet with butter (2-3 minutes per side)
3. Remove chicken from the pan and cover to keep warm
4. Add grape juice or wine along with lime juice to pan
5. Deglaze the pan using a whisk and scraping bottom of the pan (just takes 30 seconds)
6. Bring liquids to a boil, then reduce heat to medium and add the chicken broth, half and half, ginger and cayenne pepper
7. Cook over medium heat, stirring constantly, about 2 minutes until sauce has reduced and thickened.
